The A5 Olive Wagyu is extremely rare to find as it is only produced by a handful of farmers in Japan. There are only around 2000 of these cows in the world. The Olive Wagyu bloodline line goes back almost 1,300 years ago. Now let’s get into why this bloodline is named Olive Wagyu, this is as this breed originates from a small island called Shodoshima in Japan that was known for its olive trees and olive oil production. The cows' food incorporated leftover olive pulp as a way to repurpose the remains of the olives. The meat is much softer and richer in umami flavour than other Wagyu. Some sources say it tastes like gold!

3. The meat is strictly graded by the Japanese Meat Grading Association

A5 is the highest grading Japanese Wagyu can achieve which means it’s the best quality! The carcasses between the sixth and seventh rib are used for the grading. The overall grading is based on yield and grade. Yield refers to the ratio of meat to the actual weight of the carcass that is designated by A, B, C with A being the highest amount of yield. Grade refers to the meat quality based on 4 factors represented by numbers 1-5. These factors are marbling, meat color & brightness, firmness and texture of meat, and color, luster, & quality of fat. The Beef Marbling Score (BMS) also has to be between 8-12 to be awarded grade 5. This is how Japanese Wagyu gets its grading score!
